Green Tea Noodle with Edamame, Avocado and Nori Salad

Ingredients
Salad
- ½ avocado
- ½ red onion
- 2-3 radishes
- 1 capsicum
- 1 bunch basil, chopped
- 1 tsp rice wine vinegar
- 1 tsp olive oil
Noodles
- 2 bundles green tea noodles
- 1 cup edamame beans
- ½ pack togarashi sauce
To Serve
- Remaining togarashi sauce
- 1 pack shredded nori
- 25g chopped roasted cashew nuts
Have Handy
- olive oil
- pepper
- salt
- chilli flakes

Prep salad Bring a large pot of salted water to the boil. Dice avocado 2cm, then thinly slice onion, radishes and capsicum.

Make salad Place all salad ingredients in a large bowl. Toss just before serving and season to taste. Add 1-2 pinches chilli flakes if you would like a little heat.

Cook noodles and edamame Cook green tea noodles in pot of boiling water for 2 minutes. Add edamame beans and cook a further 1 minute, until tender.

Finish noodles Drain noodles and beans, then return to pot. Toss with first measure of togarashi sauce and season to taste.

Serve noodles in bowls, then top with salad, remaining togarashi sauce, nori and cashew nuts.
