Spaghetti Bolognese with Shaved Parmesan

Ingredients

Spaghetti Bolognese

  • 1 carrot
  • ½ pack onion and garlic paste
  • 1 pack beef mince
  • 1 pack fresh spaghetti
  • 1 cup beef stock
  • 1 pack tomato and basil Bolognese sauce

Bolognese Sauce

  • 1/3 bag baby spinach leaves
  • 1 courgette

To Serve

  • ½ pack shaved Parmesan cheese

Have Handy

  • olive oil
  • pepper
  • salt

Steps

  1. Bring a full kettle to the boil.
  2. Begin Bolognese Heat a drizzle of oil in a large fry-pan on medium-high heat. Grate carrot and cook for about 3 minutes, until tender. Add onion and garlic paste and mince. Cook for about 5 minutes, breaking up mince it cooks, until browned. Season to taste.
  3. Cook pasta Add boiling water and a pinch of salt to a medium pot. Bring to the boil with the lid on. Gently shake spaghetti to separate strands and cook for about 5 minutes, until just tender. Reserve ¼ cup pasta water and drain. Return pasta to pot with a drizzle of oil to avoid sticking.
  4. Finish Bolognese Add stock, tomato and basil Bolognese sauce and reserved pasta water to pan with mince. Bring to a simmer, then reduce heat to low-medium. Cook for about 5 minutes, until sauce has thickened. Remove from heat, stir through spinach and season to taste.
  5. Finish pasta Grate courgette, add to cooked spaghetti and fold through.
  6. Serve spaghetti topped with Bolognese sauce and Parmesan cheese.
