Beef Steaks with Feta Kumara and Balsamic Tomatoes

Ingredients
Kumara
- 800g kumara
- 1 red onion
- 1 courgette
- ½ bag baby spinach
- 2 Tbsp mayonnaise
- 50g feta cheese
- 2 tsp mustard
Beef
- 600g beef rump steaks
- 1 pack beef spice mix
Tomatoes
- 1 pack vine tomatoes
- 2 tsp balsamic vinegar
- 2 tsp brown sugar

Prep and cook kumara Preheat oven to 220°C. Preheat BBQ grill (if using). Dice kumara 2cm; cut onion into 1cm wedges; cut courgette into 1cm rounds. Toss kumara and onion with a drizzle of oil on a lined oven tray. Season and roast for 25 minutes, until golden and tender. Add courgette to tray and roast for a further 10 minutes.

Prep and cook beef Heat a drizzle of oil in a large fry-pan on medium-high heat. Pat beef dry and toss with beef spice mix and a drizzle of oil. Season and cook for about 3-4 minutes each side (depending on thickness), or until cooked to your liking. Set beef aside to rest before slicing thinly. Alternatively cook beef on BBQ grill.

Prep and cook tomatoes Cut tomatoes in half. Heat a drizzle of oil in same pan. Add tomatoes, vinegar and sugar to pan and cook for about 2 minutes, until starting to soften.

To finish Fold spinach, mayonnaise and mustard through the kumara and season. Crumble feta on top.

Serve kumara topped with slices of beef and a spoonful of balsamic tomatoes.
