Chicken Larb with Super Grain Salad

Ingredients

Salad

  • 100g super grain mix
  • 1 capsicum
  • 1 Lebanese cucumber
  • Juice of ¼ lemon
  • 1 pack Thai chilli dressing

Chicken Larb

  • ¼ red onion
  • 1 pack lemongrass paste
  • 300g chicken mince
  • 1 Tbsp fish sauce
  • Juice of ¼ lemon

To Serve

  • 1 baby cos lettuce
  • 2 Tbsp chopped peanuts

Have Handy

  • olive oil
  • pepper
  • salt

Steps

  1. Cook super grains Bring a half full kettle to the boil. Pour into a small pot, add a pinch of salt and bring back to the boil. Add super grain mix and cook for about 15 minutes, until tender. Drain well and return to pot.
  2. Prep veggies Dice capsicum and cucumber 1cm; thinly slice onion; shred lettuce.
  3. Begin chicken larb Heat a drizzle of oil in a large fry-pan on medium-high heat. Cook onion and lemongrass paste for 1-2 minutes, until soft and fragrant.
  4. Finish chicken larb Add chicken mince and cook for about 5 minutes, stirring, until cooked through. Stir through fish sauce and second measure of lemon juice. Season. Remove from heat.
  5. Finish salad Stir capsicum, cucumber, first measure of lemon juice and Thai chilli dressing through super grain mix. Season.
  6. Serve lettuce with salad and chicken, then sprinkle over peanuts.
