Pork Sirloin and Roasties with Mustard Apple Sauce

Ingredients

Roasties

  • 600g potatoes
  • 1 parsnip
  • 1 carrot
  • 3 Tbsp chopped parsley

Sauce

  • 1 brown onion
  • 1 apple
  • 1 pack pork spice mix
  • 1 cup GF chicken stock
  • 1 Tbsp GF mustard
  • ¼ cup sour cream
  • ½ bag baby spinach

Pork

  • 550g pork sirloin steaks

Have Handy

  • olive oil
  • pepper
  • salt

Steps

  1. Prep and cook roasties Preheat oven to 220°C. Dice potatoes and parsnip 2cm, then cut carrot into 2cm rounds. Place veggies onto a lined oven tray, drizzle with olive oil and season. Roast on top rack of oven for 25-30 minutes, until golden.
  2. Prep sauce Thinly slice onion and apple.
  3. Cook pork Pat pork dry and season. Heat a drizzle of oil in a large fry-pan on high heat. Cook pork for about 1 minute each side, until browned but not cooked through. Transfer to a oven dish (about 25 x 25cm) and reduce pan to medium heat.
  4. Make sauce Add onion and pork spice mix to pan with a drizzle of oil (if needed). Cook for about 3 minutes, until just tender. Add stock, apple and mustard. Simmer for about 2 minutes, until slightly thickened. Pour this sauce over pork and bake for 7-8 minutes, until pork is just cooked through.
  5. Finish pork Remove pork from dish (allow sauce to drip off) and set aside to rest before slicing thinly against the grain. Add sour cream and spinach to sauce, then stir to combine and season.
  6. Serve pork and roasties with sauce and parsley on top
