Lamb Kofta with Mint Salad and Yoghurt Dressing

Lamb Kofta

  • ½ brown onion
  • 300g lamb mince
  • 1 pack lamb kofta mix


  • 1 tomato
  • ½ telegraph cucumber
  • 2 radishes
  • ½ bunch of mint, thinly sliced
  • Juice of ½ lemon
  • ½ bag baby spinach


  • 150g yoghurt
  • ½ bunch mint, thinly sliced


  • 4 spinach wraps

  1. Prep kofta Finely dice onion. Combine all lamb kofta ingredients together in a large bowl with 1 tsp salt. Shape into golf ball-sized balls.
  2. Cook kofta Heat a drizzle of oil in a large fry-pan on medium-high heat. Cook kofta for 10–12 minutes, turning regularly, until golden and cooked through. Reserve pan.
  3. Prep salad Dice tomato and cucumber 1cm and thinly slice radishes. Combine in a bowl, along with first measure of mint, lemon juice, spinach and a drizzle of oil. Season.
  4. Make dressing In a small bowl, mix together yoghurt and mint.
  5. Warm wraps Wipe pan clean and return to high heat. Cook wraps, one at a time, for 30 seconds each side, until warmed through.
  6. Serve wraps piled with kofta and salad and drizzle over dressing.
