Beef Scotch Steaks with Mash and Creamy Asparagus

Ingredients

Mash

  • 400g potatoes
  • 125g frozen peas
  • 2 Tbsp milk

Beef

  • 300g beef scotch steaks
  • 1 pack beef spice mix
  • 1 pack beef spice mix
  • 150g asparagus
  • 2 cloves minced garlic
  • 1 Tbsp butter
  • ¼ cup chicken stock
  • ½ bag baby spinach
  • ¼ cup sour cream

Steps

  1. Make mash Preheat BBQ grill to medium-high (if using). Peel and dice potatoes 2cm. Add to a medium pot with a pinch of salt and cover with hot tap water. Cook on high heat with lid on, for about 20 minutes, until tender. Add peas and cook a further 2 minutes until bright green. Drain and mash with a knob of butter and milk and mash until smooth. Season.
  2. Prep beef Pat beef dry and toss with beef spice mix and a drizzle of oil. Season.
  3. Prep asparagus Slice asparagus into 3cm lengths
  4. Cook beef Heat a drizzle of oil in a large fry-pan on medium-high heat. Cook beef for 3-4 minutes each side for medium, depending on thickness, or until cooked to your liking. Rest, covered, before slicing thinly, reserving any resting juices. Alternatively, cook beef on BBQ grill. Reserve pan.
  5. Cook sauce Wipe pan clean and return to medium heat with a drizzle of oil. Cook asparagus, garlic and butter for 1-2 minutes. Add stock and cook a further 1 minute until tender and stock has reduced. Remove from heat and fold through spinach, sour cream and beef resting juices. Season
  6. Serve mash and sliced beef topped with creamy asparagus.
