Satay Chicken Skewers with Green Apple Slaw

Ingredients
Chips
- 1 bag pre-cut potato chips
Satay Chicken
- 1 pack satay chicken skewers
- 1 pack satay sauce
- ¼ cup water
Apple Slaw
- 1 apple
- 1 bag slaw
- ½ pack mung bean sprouts
- 1 pack slaw dressing
To Serve
- 1 sachet chopped peanuts

Cook chips Pat potato chips dry, then place on a lined oven tray in a single layer. Drizzle with oil and season. Bake on middle rack for about 15 minutes, until almost tender. Turn oven to high grill. Grill chips for about 10 minutes, until golden and crispy. Turn once during grill time to ensure even cooking.

Cook chicken Heat a drizzle of oil in a large, non-stick fry-pan on medium heat. Cook chicken skewers in two batches, for about 6 minutes, or until cooked through. Turn to cook on all sides. Add more oil between batches. Set aside, covered, to keep warm. Reserve pan.

Prep slaw Grate apple and place in a medium bowl with remaining apple slaw ingredients. Toss to coat well and season to taste.

Make sauce Return reserved pan to a low-medium heat. Add satay sauce and ¼ cup water. For those foodies that like a bit of spice, add a pinch of chilli flakes. Cook gently, stirring for about 1 minute, until slightly thickened and heated through. If sauce is too thick, add water until desired consistency is reached.

Serve chips, chicken and slaw on plates, topped with satay sauce and peanuts.
