Peppered Beef Steak with Fries and Béarnaise Sauce

Ingredients

Fries

  • 400g potatoes

Veggies

  • 1 broccoli
  • 250g white button mushrooms

Beef Steaks

  • 1 pack beef rump steaks
  • ½-1 tsp crushed pink and green peppercorn mix

To Serve

  • 1 pack Béarnaise sauce

Steps

  1. Cook fries Preheat oven to 220°C. Preheat BBQ hot plate to medium-high. Cut potatoes into 1cm chips. Toss with a small drizzle of oil on a lined oven tray and season. Bake for 25–30 minutes, until golden and crispy. Turn once during cooking
  2. Prep veggies Cut broccoli into small florets and quarter mushrooms.
  3. Cook beef When potatoes have 10 minutes cook time remaining, heat a drizzle of oil in a medium fry-pan on medium-high heat. Pat beef dry and season with salt and peppercorn mix. Cook for 3-4 minutes each side for medium-rare (depending on thickness), or until cooked to your liking. Alternatively, cook on BBQ hot plate.
  4. Rest beef Remove beef from pan and set aside, covered, to rest for 5 minutes before slicing thickly against the grain. Reserve pan.
  5. Cook veggies Heat a small drizzle of oil in reserved pan on high heat. Stir-fry broccoli and mushrooms for 2–3 minutes, until just tender. Season to taste.
  6. Serve fries, steak and veggies drizzled with Béarnaise sauce.
