Ingredients
Pizzas
- 3 pizza bases
- 150g cream cheese
- 2 Tbsp basil pesto
- 70g tomato paste
- 2 Tbsp sweet chilli sauce ^
- ½ red onion
- 250g white button mushrooms
- 1½ cups grated Colby cheese
Salad
- 1 Tbsp sweet chilli sauce
- 2 tsp Dijon mustard
- ½ cos lettuce
- 1 tomato
- ½ telegraph cucumber
To Serve
- Remaining basil pesto

Prep pizza Preheat oven to 220°C. Preheat two oven trays. Mix cream cheese and first measure of basil pesto in a small bowl. Mix tomato paste and first measure of sweet chilli sauce in a small bowl. Thinly slice onion and mushrooms.

Make pizza Divide tomato paste mixture between bases, spread over evenly to cover. Top with grated cheese, onion and mushrooms. Dollop with pesto cream cheese. Season.

Cook pizza Cut one pizza in half and place 1½ pizzas on each preheated tray and cook for 12–14 minutes, until the base is crisp and golden around the edges. Swap trays halfway to ensure even cooking.

Make salad Whisk sweet chilli sauce and mustard with a small drizzle of olive oil in a large bowl. Roughly chop lettuce, and dice tomato and cucumber 1-2cm. Toss all in bowl with sweet chilli mixture and season to taste.

Serve slices of pizza drizzled with remaining basil pesto with salad on the side.
