Pesto, Cream Cheese and Mushroom Pizza

  • 1 pizza base
  • ¼ cup cream cheese
  • 1 Tbsp basil pesto
  • 1 Tbsp tomato paste
  • 1 Tbsp sweet chilli sauce
  • ¼ red onion
  • 200g white button mushrooms
  • ¾ cup grated cheese


  • 1 baby cos lettuce
  • 1 tomato
  • ½ telegraph cucumber

To Serve

  • Remaining basil pesto (optional)


  1. Prep pizza Preheat oven to 220°C. Preheat an oven tray. Mix cream cheese and first measure of basil pesto in a small bowl. Mix tomato paste and sweet chilli sauce in a small bowl. Thinly slice onion and mushrooms.
  2. Make pizza Spread tomato paste mixture evenly over pizza base. Top with grated cheese, onion and mushrooms. Dollop with pesto cream cheese. Season.
  3. Cook pizza Place pizza on preheated tray and cook for 12–14 minutes, until the base is crisp and golden around the edges
  4. Make salad Roughly chop lettuce, and dice tomato and cucumber 1cm. Toss all in a bowl with a drizzle of oil and vinegar. Season.
  5. Serve slices of pizza drizzled with remaining basil pesto with salad on the side.
