Lamb Lolipops with Baked Kumara

Ingredients
Kumara
- 600g kumara
Lamb Lollipops
- 1 pack lamb mince
- 1 pack lamb spice mix
- 10 bamboo skewers
Salad
- 1 pack cherry tomatoes
- 1 carrot
- ½ telegraph cucumber
To Serve
- 1 pack lamb lollipop drizzle
- 1 pack sliced almonds

Prep and cook kumara Preheat oven to 230°C. Preheat BBQ hot plate to medium-high (if using). Slice kumara into quarters lengthways. Toss on a lined oven tray with a drizzle of oil and season. Bake for about 25 minutes, until golden and tender.

Make lamb lollipops In a medium bowl, mix lamb lollipop ingredients together (except for skewers) with a pinch of salt. Divide mixture into 10 equal portions, then use damp hands to shape into 8cm long sausages. Thread one sausage onto each skewer and set aside.

Cook lamb lollipops Heat a small drizzle of oil in a large fry-pan on medium-high heat. Cook lamb lollipops for 6-7 minutes, until browned on all sides and cooked through. Use tongs to turn lollipops. Set aside covered, to rest a few minutes. Alternatively, cook lollipops on BBQ hot plate.

Make salad Slice tomatoes in half; grate carrot; dice cucumber 1cm. Add to a medium bowl with a small drizzle of olive oil. Toss to combine and season.

Serve kumara, lamb lollipops and salad topped with lollipop drizzle and almonds.
