Pork Schnitzel with Caesar and Fries

Ingredients

Fries

  • 1 pack pre-cut fries 1 pack pre-cut fries

Pork Schnitzel

  • 1 egg
  • 1 tsp Dijon mustard
  • 1 pack lemon and herb crumb
  • 1 pack pork schnitzel

Caesar

  • 1 cos lettuce
  • 1 pack cherry tomatoes
  • 1 avocado
  • ½ pack shaved Parmesan cheese
  • ½ pack Caesar dressing

To Serve

  • Remaining Caesar dressing

Steps

  1. Cook fries Pat fries dry, spread on a lined oven tray, drizzle with oil and season. Bake on middle oven rack for about 15 minutes, until tender. Turn oven to high grill. Grill fries for about 10 minutes, until golden and crispy. Turn halfway through grill time, to ensure even cooking
  2. Prep pork In a large bowl, whisk together egg, mustard, 2 Tbsp water and a pinch of salt. In another large bowl, add lemon and herb crumb. Pat pork dry. Toss pork through egg mixture to coat, then add to crumb in batches, shaking off excess mixture as you go. Toss to coat well.
  3. Cook pork Heat a drizzle of oil in a large, non-stick fry-pan, on medium-heat heat. Cook pork in batches, for 1-2 minutes each side, until golden and cooked through. Wipe pan out between batches and add more oil. Set aside on paper towels.
  4. Prep Caesar Roughly chop lettuce; cut cherry tomatoes in half; dice avocado 1cm. Add all to a medium bowl, along with Parmesan cheese and first measure of Caesar dressing. Season lightly.
  5. Serve Caesar topped with pork and remaining dressing, then place fries on the side.
