Beef Sirloin Steak with Kumara Feta Mash and Jus

Ingredients

Mash

  • 600g orange kumara
  • 2 carrots
  • ½ pack baby spinach
  • 100g feta cheese
  • Zest of ½ lemon

Beef

  • 1 pack beef sirloin steaks
  • 1 pack steak rub

To Serve

  • 1 broccoli
  • 1 pack beef jus

Steps

  1. Prep mash and veggies Preheat BBQ hot plate (if using). Bring a large pot and a small pot of salted water to the boil. Peel kumara and carrots, then dice 2cm. Roughly chop spinach and broccoli, then set aside. Cook kumara and carrots in large pot of salted water for 15-18 minutes, until soft. Drain and mash with a knob of butter. Season and set aside.
  2. Prep and cook beef Coat beef in steak rub. Use a smaller amount of rub or keep beef plain for little foodies. Heat a drizzle of oil in a large fry-pan on high heat. Cook beef for 2-3 minutes each side for medium-rare (depending on thickness), or until cooked to your liking. Alternatively, cook on BBQ. Set aside, covered, for 3-4 minutes. Slice against the grain and reserve any resting juices.
  3. Cook broccoli Cook broccoli in small pot of salted water for 2-3 minutes, until bright green and tender. Drain, drizzle with a little oil and season.
  4. Finish mash Crumble feta cheese into mash and stir through, along with spinach and lemon zest. Season.
  5. Heat jus Wipe previous pan clean and return to a medium heat. Add beef jus and any resting juices, then bring to a simmer. Simmer for about 2 minutes, until warmed through.
  6. Serve mash and broccoli topped with beef and jus.
