Thai Turkey Patties with Rice Salad and Coconut Dressing

Ingredients

Salad

  • 1 pack Japanese brown rice
  • 125g frozen corn
  • ½ telegraph cucumber
  • 1 baby cos lettuce
  • ½ bunch mint
  • 1 pack sweet chilli dressing
  • 1 tsp chopped roasted peanuts

Patties

  • 1 pack turkey mince
  • ½ tsp Thai green curry paste
  • 1 pack makrut spices

To Serve

  • ½ pack Thai coconut dressing
  • ½ bunch coriander, chopped

Steps

  1. Cook rice and corn Bring a small pot of salted water to the boil. Once boiling, add rice and cook for 18 minutes, until tender. Add corn and cook for a further 3 minutes. Drain and run under cold water to cool slightly. Drain well.
  2. Prep patties In a medium bowl, combine all patty ingredients with a pinch of salt and mix well. Divide mixture into 3 balls, then flatten to make 1cm thick patties.
  3. Prep salad Dice cucumber 1cm; thinly slice lettuce; chop mint leaves. Place in a medium bowl.
  4. Cook patties When rice has about 5 minutes cook time remaining, heat a drizzle of oil in a medium fry-pan on medium heat. Cook patties in pan for 2-3 minutes each side, until golden brown and cooked through. Take care not to let patties burn. Rest, covered, for 2-3 minutes
  5. Finish salad Add cooked rice, corn and remaining salad ingredients to bowl with salad. Toss just before serving and season.
  6. Serve salad topped with patties, Thai coconut dressing and coriander.
