Seared Beef Sirloin with Soba Noodle Salad

Ingredients
Beef Sirloin
- 1 pack beef sirloin steaks
- 2 Tbsp soy sauce ^
- 1 Tbsp sesame oil ^
Soba Noodle Salad
- 1 pack soba noodles
- 1 pack Japanese dressing
- 1 Tbsp sesame oil ^
- ½ telegraph cucumber *
- 2 baby bok choy
- 1 courgette
To Serve
- 1 pack goma dare sauce
- 1 pack chopped peanuts
- ½ bunch coriander *

Prep beef Preheat BBQ grill to medium-high. Bring a medium pot of salted water to the boil. Pat beef dry and toss with soy sauce and first measure of sesame oil. Set aside to marinate.

Cook noodles Cook noodles in pot of boiling water for about 4 minutes, until just tender. Drain, refresh under cold water and drain again. Place in a large bowl and toss with Japanese dressing and second measure of sesame oil.

Cook beef Cook beef on BBQ grill for about 5 minutes each side, for medium (depending on thickness), or until cooked to your liking. Rest, covered, for 5 minutes before slicing thinly against the grain.

Make salad Dice cucumber 1cm; thinly slice bok choy; peel courgette into ribbons. Add to bowl with noodles and toss to combine. Season with pepper.

Serve noodle salad topped with beef, goma dare sauce, peanuts and coriander.
