Beef Steak with Asparagus Salad and Horseradish Cream

Ingredients

Beef Steak

  • 1 pack beef sirloin steaks
  • 2 Tbsp man rub

Asparagus Salad

  • 1 ciabatta bread
  • 3 cloves minced garlic
  • 1 bunch asparagus
  • ½ telegraph cucumber *
  • 1 avocado
  • 1 pack mesclun
  • 1 bunch basil

To Serve

  • 1 pack horseradish cream

Steps

  1. Prep beef Preheat BBQ grill and hot plate to medium-high. Pat beef dry and toss in a bowl with man rub and a drizzle of oil. Season with salt.
  2. Prep salad Tear or dice bread 3cm and toss with garlic and a drizzle of olive oil. Season with salt. Trim ends off asparagus, drizzle with oil and season.
  3. Cook beef and asparagus Cook beef and asparagus on BBQ grill. Cook beef for about 5 minutes each side for medium (depending on thickness), or until cooked to your liking. Cook asparagus for about 5 minutes until tender, turning often. Rest beef, covered, for a few minutes before slicing thinly.
  4. Cook bread Cook bread on BBQ hot plate for about 5 minutes until golden, turning often.
  5. Make salad Slice cucumber thinly on an angle and slice avocado flesh 1cm thick. Add to a platter with mesclun, a drizzle of olive oil and a drizzle of vinegar. Top with asparagus, croutons and basil leaves.
  6. Serve beef and salad topped with horseradish cream.
