Beef Steak Sammies with Horseradish Gherkin Mayo

Ingredients

Carrot Chips

  • 3 carrots
  • 1 pack carrot spice mix

Caramelised Onion

  • 1 brown onion
  • 1 Tbsp sugar ^
  • 1 Tbsp balsamic vinegar ^

Steak Sandwich

  • 2 tomatoes
  • 1 Lebanese cucumber
  • ½ iceberg lettuce *
  • 6 Turkish foldovers
  • 1 pack cheese slices
  • 1 pack beef sirloin sirloin steaks
  • ½ pack horseradish gherkin mayo
  • Tomato sauce (optional) ^
  • Mustard (optional) ^

Steps

  1. Cook carrot chips Preheat oven to 230oC. Heat BBQ hot plate or grill to high (if using). Cut carrots into chips and toss on a lined tray with carrot spice mix and a small drizzle of oil. Season and roast for about 20-25 minutes until tender.
  2. Cook onion Thinly slice onion and add to a pot with a small knob of butter, sugar, balsamic vinegar, a small drizzle of oil and a pinch of salt. Cook on medium heat for about 10 minutes until tender. Stir often and add a splash of water if onion starts to stick.
  3. Prep veggies and bread Thinly slice tomatoes and cucumber and roughly tear lettuce. Place Turkish foldovers on a lined oven tray.
  4. Cook beef Heat a small drizzle of oil in a large fry-pan on high heat. Pat beef dry and season. Cook for about 3 minutes each side for medium (depending on thickness), or until cooked to your liking. Rest, covered. Alternatively, cook on the BBQ.
  5. Heat Turkish foldovers When carrots have 5 minutes cook time remaining, heat foldovers, on rack below carrots, for about 5 minutes, or until warmed through and toasted. Slice rested beef thinly against the grain.
  6. Serve everything in the middle of the table and let everyone build their own sandwich. Serve carrot chips on the side.
