Lamb Kofta with Bombay Potatoes and Cucumber Salsa

Ingredients
Potatoes
- 400g potatoes
- 1 pack Bombay spice mix
Lamb Kofta
- ½ red onion
- 1 carrot
- 1 pack lamb mince
- 1 clove minced garlic
- 1 pack kofta spice mix
- 1 egg yolk ^
Salsa
- 1 tomato
- ½ telegraph cucumber *
- 1 radish
To Serve
- 1 Tbsp Bombay aioli
- 1 bunch mint

Cook potatoes Preheat oven to 220°C. Preheat BBQ hot plate to medium (if using). Dice potatoes 2cm. Toss on a lined oven tray with Bombay spice mix and a drizzle of oil. Season and roast for about 25 minutes, until tender.

Prep kofta Finely dice onion, grate carrot and add to a bowl with remaining lamb kofta ingredients and ½ tsp salt. Mix well and use ¼ cup measure to scoop out mixture then roll into small sausages.

Cook kofta Heat a large fry-pan on medium heat and cook kofta for 8-10 minutes, turning regularly, until golden and cooked through. Alternatively, cook on BBQ hot plate.

Prep salsa Dice tomato and cucumber 1cm and thinly slice radish. Place in a bowl with a small drizzle of oil and vinegar. Toss to combine and season to taste.

Serve potatoes, kofta and salsa with Bombay aioli and mint.
