Five Spiced Beef Noodles with Asian Pesto

Ingredients
Beef
- 1 capsicum
- 1 pack beef mince
- 1 clove minced garlic
- ½ Tbsp minced ginger
- 1 pack Asian spice mix
- 1 Tbsp soy sauce ^
- 2 tsp fish sauce ^
- ½ cup water ^
- ½ bag baby spinach *
Noodles
- 1 bunch asparagus
- ½ pack soba noodles
- 1 tsp sesame oil ^
To Serve
- 1 pack Asian pesto
- 1 pack crispy shallots

Prep veggies Bring a pot of hot salted water to the boil. Dice capsicum 1cm. Cut asparagus in half lengthways and widthways.

Cook beef Heat a drizzle of oil in a fry-pan on medium high heat. Cook mince for about 4 minutes, until browned. Add garlic, ginger and Asian spice mix and cook for 2 minutes, until fragrant. Add soy sauce, fish sauce, water and capsicum to pan and cook for about 3 minutes, until sauce has thickened. Fold through spinach and season to taste.

Cook noodles Add noodles to pot of boiling water and cook for 2 minutes. Add asparagus and cook a further 2 minutes, until both are just tender. Drain well, return to pot and toss with sesame oil.

Serve noodles topped with beef, Asian pesto and a sprinkle of crispy shallots.
