Five Spiced Beef Noodles with Asian Pesto

  • 1 capsicum
  • 1 pack beef mince
  • 1 clove minced garlic
  • ½ Tbsp minced ginger
  • 1 pack Asian spice mix
  • 1 Tbsp soy sauce ^
  • 2 tsp fish sauce ^
  • ½ cup water ^
  • ½ bag baby spinach *


  • 1 bunch asparagus
  • ½ pack soba noodles
  • 1 tsp sesame oil ^

To Serve

  • 1 pack Asian pesto
  • 1 pack crispy shallots


  1. Prep veggies Bring a pot of hot salted water to the boil. Dice capsicum 1cm. Cut asparagus in half lengthways and widthways.
  2. Cook beef Heat a drizzle of oil in a fry-pan on medium high heat. Cook mince for about 4 minutes, until browned. Add garlic, ginger and Asian spice mix and cook for 2 minutes, until fragrant. Add soy sauce, fish sauce, water and capsicum to pan and cook for about 3 minutes, until sauce has thickened. Fold through spinach and season to taste.
  3. Cook noodles Add noodles to pot of boiling water and cook for 2 minutes. Add asparagus and cook a further 2 minutes, until both are just tender. Drain well, return to pot and toss with sesame oil.
  4. Serve noodles topped with beef, Asian pesto and a sprinkle of crispy shallots.
