Pork Bites with Potato Wedges

Ingredients
Potato Wedges
- 600g potatoes
Pork Bites
- 1 pack pork rump steaks
- 1 pack pork spice mix
- 2 Tbsp flour ^
- 1 egg ^
- 1 pack panko breadcrumbs
Salad
- 1 baby cos lettuce
- 1 carrot
- 1 apple
Dipping Sauces
- 1 pack sweet chilli mayo
- 1 pack plum sauce

Cook wedges Preheat oven to 220oC. Cut potatoes into wedges. Toss on a lined oven tray with a small drizzle of oil and season. Cook for 20-35 minutes, until golden and crispy. Turn once during cooking.

Prep pork Trim excess fat from pork, then dice 2cm. Pat dry and add to a medium bowl, along with pork spice mix and ½ tsp salt. Toss to coat. Add flour, then continue to toss to coat well. In a small bowl, whisk egg. Add whisked egg to bowl with pork and toss gently to coat well.

Crumb pork Add breadcrumbs to a small bowl. Place handfuls of pork into the breadcrumbs and coat well. Set aside.

Make salad Tear lettuce leaves; grate carrot; cut apple into matchsticks or grate. Add to a medium bowl with a small drizzle of olive oil and vinegar. Toss to combine.

Cook pork Heat a small drizzle of oil in a large fry-pan on medium-high heat. Cook pork in batches, for about 4 minutes, until golden on all sides. Add more oil as needed. Wipe fry-pan out between batches. Transfer pork to another lined oven tray and bake for 5 minutes, until cooked through.

Serve wedges, pork bites and salad with dipping sauces on the side.
