Beef Sirloin Steak with Tomato Salsa and Parmesan Potatoes

Ingredients

Parmesan Potatoes

  • 1 pack potato fries
  • 1 pack potato spice mix
  • ½ pack Parmesan cheese *

Tomato Salsa

  • 1½ cups frozen corn
  • 2 tomatoes
  • ½ pack feta cheese *
  • Zest and juice of ½ lemon
  • 1 bunch basil

Beef

  • 1 pack beef sirloin steak

Chipotle Aioli

  • ½ pack chipotle aioli

Steps

  1. Preheat oven to 230°C. Preheat BBQ hot plate or grill to medium-high (if using). Cook potatoes Pat potato fries dry and place on a lined oven tray. Toss with a small drizzle of oil and potato spice mix, then spread in a single layer. Bake on middle oven rack for about 15 minutes, until tender. Turn once during cooking. Turn oven to high grill. Sprinkle Parmesan cheese over fries and grill for 5-10 minutes, until golden and crispy.
  2. Cook corn Heat a small drizzle of oil in a large fry-pan on medium-high heat. Cook corn for about 4 minutes, turning occasionally, until charred and tender. Transfer corn to a medium bowl. Return pan to high heat with a small drizzle of oil.
  3. Cook beef Pat beef dry and season with salt. Cook for about 4 minutes each side for medium (depending on thickness), or until cooked to your liking. Alternatively, cook on BBQ. Set beef aside, to rest for 3-4 minutes. Slice thinly against the grain.
  4. Prep and make salsa Dice tomatoes 1cm and crumble feta cheese. Add both to bowl with corn, along with all remaining tomato salsa ingredients. Drizzle with a little olive oil and season.
  5. Serve beef topped with salsa, chipotle aioli and potatoes on the side.
