Seared Lamb Loin with Soba Noodle Salad

Ingredients

Lamb

  • 1 pack lamb loin
  • 1 Tbsp soy sauce ^
  • 1 tsp sesame oil ^

Noodle Salad

  • ½ pack soba noodles
  • 1 pack Japanese dressing
  • 1 tsp sesame oil ^
  • 1 Lebanese cucumber
  • 1 baby bok choy
  • 1 courgette

To Serve

  • ½ pack goma dare sauce
  • ½ pack chopped peanuts
  • ½ bunch coriander, chopped *

Steps

  1. Prep lamb Preheat BBQ grill to medium-high. Bring a medium pot of salted water to the boil. Pat lamb dry, add to a medium bowl, then toss with soy sauce and first measure of sesame oil. Leave to marinate
  2. Cook noodles Cook soba noodles in pot of boiling water for 3-4 minutes, until just tender. Drain, refresh under cold water and drain well. Place in a large bowl, then toss with Japanese dressing and second measure of sesame oil.
  3. Cook lamb Cook lamb on BBQ grill for 2-3 minutes each side for medium-rare (depending on thickness), or until cooked to your liking. Rest, covered, for a few minutes. Slice thinly against the grain and season.
  4. Make salad Dice cucumber 1cm; thinly slice bok choy; peel courgette into ribbons. Add to bowl with noodles and toss to combine. Season to taste with pepper.
  5. Serve noodle salad topped with lamb, goma dare sauce, peanuts and coriander.
