Smokin’ Mexican Halloumi Tacos with Kumara Skinny Fries

Ingredients

Fries

  • 150g orange kumara

Tacos

  • ½ block haloumi cheese
  • 2 tsp From My Kitchen Smokin’ Mexican Rub
  • 1 tomato
  • ½ cucumber *
  • 1 baby cos lettuce
  • ½ bunch parsley *
  • 1 wholemeal tortilla

To Serve

  • ¼ pack chipotle crema
  • 1 tsp sour cream

Steps

  1. Cook kumara Preheat oven to 220°C. Cut kumara into 0.5cm thick fries and toss on a lined oven tray with a small drizzle of olive oil. Season and bake in oven for about 20 minutes, until golden and tender.
  2. Prep haloumi Pat haloumi cheese dry and cut into 0.5cm thick slices. Drizzle with a little oil and coat in Smokin’ Mexican Rub. Leave to marinate.
  3. Prep salad Finely dice tomato and cucumber; thinly slice lettuce; roughly chop parsley. Toss all in a medium bowl with a small drizzle of olive oil and vinegar. Season.
  4. Cook haloumi When kumara has 5 minutes cook time remaining, heat a small drizzle of oil in a medium fry-pan on medium-high heat. Cook haloumi for about 1 minute each side, until golden. Transfer to a paper towel to drain.
  5. Heat tortilla Wrap tortilla in foil and heat in oven for 2-3 minutes, until warmed through. Alternatively, heat in microwave for 30 seconds.
  6. Serve tortilla filled with haloumi, salad, chipotle crema and sour cream, then place fries and any remaining salad on the side. Have
