Oregano and Lemon Chicken with Super Grain Greek Tabbouleh

Ingredients

Tabbouleh

  • 100g super grain mix
  • ½ pack vine tomatoes *
  • ½ bag baby spinach *
  • 1 pack feta cheese
  • Juice of ½ lemon *

Chicken

  • 300g chicken breast
  • 1 pack oregano spice blend
  • Zest of ½ lemon *

Tzatziki

  • ½ telegraph cucumber *
  • 2 Tbsp yoghurt

Steps

  1. Cook grains Preheat BBQ grill or hot plate to high (if using). Bring a small pot of salted water to the boil. Once boiling, add super grain mix and cook for about 15 minutes, until tender with a slight bite. Drain, rinse under warm water and drain well.
  2. Prep chicken Pat chicken dry and cut into steaks. Place hand flat on top of chicken and slice through horizontally. Mix in a bowl with oregano spice blend, lemon zest and a drizzle of oil.
  3. Cook chicken Heat a drizzle of oil in a medium fry-pan on medium-high heat. Cook chicken for about 3-5 minutes each side (depending on thickness), or until cooked through. Rest, covered before slicing thinly against the grain. Alternatively, do this on BBQ grill.
  4. Make tzatziki Grate cucumber and squeeze gently to remove excess moisture. Place in a small bowl with yoghurt, mix well and season to taste. Set aside. Finely dice tomatoes and crumble feta.
  5. Finish tabbouleh Return drained super grains to pot, along with tomatoes, spinach, feta and lemon juice. Toss with a drizzle of oil and season.
  6. Serve tabbouleh topped with slices of chicken and tzatziki.
