Beef Sirloin Steak with Roast Vegetable Salad and Pesto

Ingredients
Salad
- 800g kumara
- 1 broccoli
- 1 courgette
- 1 capsicum
- 3 Tbsp mayonnaise
- 1 Tbsp sweet chilli sauce
Beef Sirloin Steak
- 600g beef sirloin steak
- 1 pack beef spice
To Serve
- 1 pack garden pesto

Cook veggies Preheat oven to 220oC. Preheat BBQ grill (if using). Dice kumara 2cm and toss on a lined tray with a drizzle of oil. Season and roast for 15 minutes. Cut broccoli into small florets; cut courgette into 2cm rounds; roughly chop capsicum. Add to a second lined oven tray and roast (below kumara) for 10-12 minutes, until tender.

Prep beef Pat beef dry and toss with beef spice, ½ tsp salt and a drizzle of oil. Season with pepper.

Cook beef Heat a drizzle of oil in a large fry-pan on high heat. Cook beef for 3-4 minutes each side for medium (depending on thickness), or until cooked to your liking. Rest, covered for 3 minutes then slice thinly against the grain. Alternatively, cook on BBQ.

To finish Add kumara and cooked veggies to a large bowl with mayonnaise and sweet chilli sauce and toss to combine. Season to taste.

Serve salad on plates topped with sliced beef and a dollop of garden pesto.
