Tataki Beef Salad with Ponzu Dressing

Ingredients

Rice

  • 1 cup brown rice
  • 1¼ cups water

Tataki Beef Salad

  • 300g beef sirloin steaks
  • 1 pack tataki beef marinade
  • 1 pack sesame seeds
  • ½ telegraph cucumber *
  • 1 capsicum
  • 2 radishes
  • ½ bag spinach *
  • 2 Tbsp ponzu dressing

To Serve

  • Remaining ponzu dressing

Steps

  1. Cook rice Preheat BBQ grill to high heat (if using). Combine rice, water and a pinch of salt in a pot and bring to the boil. Once boiling, cover with a lid and reduce to lowest heat to cook for 15 minutes. Turn off heat and steam, covered, for 8 more minutes. Do not lift lid during cooking.
  2. Marinate beef and toast sesame seeds Pat beef dry and place in a bowl with tataki beef marinade. Toss well to coat and set aside for at least 10 minutes to marinate. Heat a large, dry frypan on medium heat and toast sesame seeds until golden, about 2 minutes. Set seeds aside and return pan to high heat with a drizzle of oil.
  3. Cook beef Cook beef in pan for 3-4 minutes each side for medium (depending on thickness), or until cooked to your liking. Set aside, covered, to rest before slicing thinly against the grain. Alternatively, cook beef on BBQ.
  4. Cut cucumber in half lengthways and thinly slice. Thinly slice capsicum and radishes. Place all in a large bowl with spinach and set aside. Just before serving, toss through sliced beef, any resting juices and first measure of ponzu dressing. Season to taste.
  5. Serve rice with tataki beef salad. Drizzle with ponzu dressing and sprinkle with sesame seeds.
