Pulled Pork Taco with Cucumber Salsa

Ingredients
Salad
- 1 iceberg lettuce
- 1 carrot
- 2 Tbsp mayonnaise ^
Salsa
- 1 Lebanese cucumber
- ¼ red onion
- 1 bunch coriander
Chipotle Sour Cream
- ½ pack chipotle sauce
- 125g sour cream
Tacos
- 10 soft tacos
- 1 pack chipotle pulled pork
- ½ pack chipotle sauce

Make salad Preheat BBQ hot plate and grill to medium. Shred lettuce and grate carrot. Place in a large bowl with mayonnaise and a drizzle of vinegar and toss to combine. Season.

Make salsa Finely dice cucumber and red onion. Roughly chop coriander and place all in a medium bowl along with a drizzle of vinegar and olive oil. Toss to combine and season.

Prep taco In a small bowl, combine chipotle sour cream ingredients. Separate tacos into two piles and wrap in foil. Place pork and any pork sauce in a bowl.

Cook pork and taco Lightly grease BBQ hot plate. Remove pork from sauce and cook for 10-12 minutes, depending on size, or until heated through and starts to pull apart. Turn often, to ensure even cooking and baste with pork sauce.

Remove pork from heat and roughly pull apart with tongs. Toss with second measure of chipotle sauce, and season to taste. While pork is cooking, place tacos on BBQ grill and cook for about 3 minutes each side.

Serve tacos filled with salad, pulled pork, salsa and chipotle sour cream.
