Mexican Beef Loaded Wedges

Ingredients

Wedges

  • 150g kumara

Beef

  • 1 shallot
  • 1 carrot
  • 1 pack beef mince
  • 1 pack Mexican stock blend
  • ½ cup water ˆ

To Serve

  • 1 baby cos lettuce
  • 1 tomato
  • 1 Tbsp feta cheese
  • 1 Tbsp sour cream
  • 1 bunch coriander

Steps

  1. Cook wedges Preheat oven to 220°C. Cut kumara into 1cm wedges. Toss on a lined oven tray with a small drizzle of oil. Season and roast in oven for about 15 minutes until tender and golden.
  2. Prep and cook shallot Thinly slice shallot. Heat a small drizzle of oil in a medium fry pan on medium-high heat. Cook shallot for 1-2 minutes until tender.
  3. Cook beef Grate carrot and add to pan. Add beef and Mexican stock blend and cook for 3-4 minutes, stirring, until browned.
  4. Finish beef Add water and bring to a simmer. Turn heat to low and cook for about 5 minutes until reduced and thickened. Season to taste.
  5. Prep salad Separate lettuce leaves and finely dice tomato.
  6. Serve wedges topped with beef, feta, sour cream and coriander. Serve lettuce and tomato on the side.
