Middle Eastern Beef Patties with Cauliflower Tabbouleh and Hummus

Ingredients

TABBOULEH

  • 1 can chickpeas, drained and rinsed
  • 1 pack cauli pearls
  • 1 pack tabbouleh spice
  • 1 courgette, grated
  • Zest and juice of 1 lemon
  • ½ bag baby spinach, roughly chopped *
  • 4 Tbsp chermoula dressing

PATTIES

  • 1 pack lean ground beef and pork
  • ½ red onion, finely diced *
  • 1 egg ^
  • 1 pack Middle Eastern spices
  • 1 carrot, grated

TO SERVE

  • 4 Tbsp hummus
  • Remaining chermoula dressing

Steps

  1. Preheat oven to 220ºC. Preheat BBQ grill or hot plate to medium-high (if using).
  2. Prep & begin tabbouleh. Toss all tabbouleh ingredients (except spinach and chermoula dressing) together on a lined oven tray with 1 tsp oil. Season and bake (on lower oven rack) for 15- 17 minutes, turning once, until tender.
  3. Prep patties. In a bowl, mix together all patty ingredients with ¾ tsp salt. Using clean, damp hands and a ¼ cup measure, shape mixture into balls then flatten into patties, about 1.5cm thick. Place on a second lined oven tray, then brush with 1 tsp oil.
  4. Cook patties. When tabbouleh has 5 minutes cook time remaining, cook patties (on upper oven rack) for 5 minutes. Switch oven to high grill and grill a further 5 minutes, until cooked through. Set aside. Alternatively, cook on BBQ for 3-4 minutes each side, until cooked through.
  5. Finish tabbouleh. Toss spinach and first measure of chermoula dressing through tabbouleh on tray. Season.
  6. Serve tabbouleh topped with patties, hummus and remaining chermoula dressing.
