Harissa Lamb Meatballs with Couscous

Ingredients
Meatballs
- 1 harissa lamb meatballs
Salad
- 1¼ cups chicken stock ^
- 1 pack couscous
- 1 courgette
- 1 bag baby spinach

Cook meatballs Preheat oven to 180°C. Remove plastic cover from meatballs and cover with foil. Place on an oven tray and cook for about 30 minutes, or until heated through. Remove from oven on tray.

Cook couscous Bring stock to the boil in a pot on high heat. Once boiling turn off heat, add couscous and a pinch of salt, stir, cover and leave for 5 minutes, then fluff up grains with a fork.

Prep salad Grate courgette and roughly chop spinach. Fold veggies through cooked couscous, along with a drizzle of olive oil and vinegar. Season to taste.

Serve couscous salad topped with meatballs.
