Japanese Beef with Sesame Corn

Ingredients

Broccolini Salad

  • 1 cup Jasmine rice
  • 1½ cups water ^
  • 2 courgettes
  • 1 bunch broccolini
  • 3 Tbsp miso dressing

Sesame Corn

  • 2 corn cobs
  • 1 pack toasted sesame seeds
  • Remaining miso dressing
  • 3 Tbsp mayonnaise ^

Asian Beef

  • 1 pack Asian beef flank

Steps

  1. Cook rice Preheat BBQ grill and hot plate to medium. Combine rice, water and a pinch of salt in a small pot and bring to the boil. As soon as it boils, cover with a lid and reduce to lowest heat to cook for 12 minutes. Turn off heat and steam, covered, for 8 minutes. Do not lift lid during cooking.
  2. Prep veggies Cut courgettes in half lengthways and cut into 2cm sticks. Cut any large pieces of broccolini in half lengthways. Peel corn and cut into 4cm rounds. Toss veggies with a drizzle of oil (do not season).
  3. Cook beef Cook beef on BBQ grill for 4-5 minutes each side for medium (depending on thickness), or until cooked to your liking. Rest, covered, for 10 minutes, before slicing thinly against the grain.
  4. Cook veggies Cook corn on BBQ grill, flat-side-down for 4 minutes. Add broccolini and courgette to grill and cook all veggies for a further 4 minutes, until tender and slightly charred. Cut cooked broccolini in half widthways and add to a bowl, along with courgette, cooked rice and first measure of miso dressing. Toss to combine and season with pepper.
  5. Make corn Combine remaining miso dressing and mayonnaise in a small bowl. Combine corn, sesame seeds and 2 Tbsp of miso mayonnaise in a bowl, toss and season.
  6. Serve salad, beef and corn on plates and top with miso mayo.
