Beef Bolognese

Ingredients

Bolognese

  • 1 carrot
  • 1 pack onion and garlic paste
  • 1 pack beef mince
  • 1 pack tomato and basil Bolognese Sauce
  • 1 cup chicken stock ^
  • ½ pack baby spinach *

To Serve

  • 1 pack tagliatelle pasta
  • ½ pack Parmesan cheese

Steps

  1. Prep and cook veggies Bring a pot of salted water to the boil. Heat a small drizzle of oil in a deep fry-pan on medium heat. Grate carrot and add to pan, along with onion and garlic paste. Cook for 3-4 minutes, until soft.
  2. Cook beef Increase pan heat to medium-high and add beef to pan. Cook for about 6 minutes, breaking beef up as it cooks, until browned.
  3. Finish Bolognese sauce Add tomato and basil Bolognese sauce and stock to pan, then bring to a gentle simmer. Reduce heat to medium and cook for 5-7 minutes, or until sauce has thickened.
  4. Cook pasta While sauce simmers, use hands to separate strands of pasta. Cook in pot of boiling water for 4-6 minutes, until just tender. Reserve ½ cup pasta water and drain. Return pasta to pot with a small drizzle of oil, to prevent sticking.
  5. Add spinach Roughly chop spinach and add to Bolognese sauce. Cover pan and leave spinach to wilt for about 2 minutes. Season. If your sauce is too thick, add 2-3 Tbsp pasta water.
  6. Serve pasta topped with Bolognese sauce and Parmesan.
