Beef Bowls with Teriyaki Dressing

Ingredients
Beef
- 1 pack beef stir-fry
- 1 pack beef marinade
Veggies
- 1 carrot
- 1 capsicum
- 1 spring onion (optional)
- ½ cos lettuce *
- ½ telegraph cucumber *
Rice
- 2 packs brown basmati rice
To Serve
- 1 pack teriyaki dressing
- 1 pack sesame seeds

Prep beef Pat beef dry, add to a bowl with beef marinade and season. Set aside to marinate.

Prep veggies Grate carrot, then thinly slice capsicum, spring onion, lettuce and cucumber. Toss with a drizzle of vinegar and oil just before serving.

Cook beef Heat a drizzle of oil in a fry-pan on high heat. Stir-fry beef in batches, for about 1 minute, until just cooked. Cover to rest. Make sure the pan is nice and hot, so your beef fries, not boils.

Heat rice Heat rice as per microwave instructions on pack. Tear open pack, tip out rice and fluff with a fork before serving. Alternatively, stir-fry rice until piping hot.

Serve rice topped with beef, veggies, teriyaki dressing and sesame seeds.
