Beef Bolognese

Ingredients

Bolognese

  • 1 brown onion
  • 1 carrot
  • 1 pack beef mince
  • 1 pack tomato paste
  • 1 can chopped tomatoes
  • 1 pack Bolognese mix
  • 1 cup water ^
  • ½ pack baby spinach *

To Serve

  • 1 pack spaghetti
  • 1 pack Parmesan cheese, finely grated

Steps

  1. Prep and cook veggies Bring a pot of salted water to the boil. Finely dice onion and grate carrot. Heat a drizzle of oil in a deep fry-pan on medium heat. Add onion and carrot to pan. Cook for 3-4 minutes, until soft.
  2. Cook beef Add beef to pan and cook for about 6 minutes, stirring, until browned.
  3. Finish Bolognese sauce Stir in tomato paste, canned tomatoes, ½ tsp salt, Bolognese mix and water. Simmer for about 10 minutes, until sauce has reduced.
  4. Cook pasta Add pasta to pot of boiling water and cook for 10-12 minutes, until just tender. Drain well and return to pot with a drizzle of oil, to prevent sticking.
  5. To finish Roughly chop spinach and add to pan. Cover pan and leave spinach to wilt for about 2 minutes. Season.
  6. Serve pasta topped with Bolognese sauce and cheese.
