Miso Glazed Beef with Slaw and Soba Noodles

Ingredients

Slaw

  • 1 tsp sesame seeds
  • ½ baby bok choy
  • 1 pack slaw
  • 1 pack Asian dressing

Beef

  • 1 pack beef sirloin steak
  • ½ pack miso glaze

Soba

  • 1 bundle soba noodles

Steps

  1. Toast sesame seeds Bring a small pot of salted water to the boil. Heat a dry fry pan on medium heat. Toast sesame seeds for about 30 seconds, until light brown. Transfer to a bowl. Keep pan on heat.
  2. Cook beef Pat beef dry and season. Increase pan heat to medium-high and add a drizzle of oil. Cook beef for about 3 minutes each side, for medium (depending on thickness), or until cooked to your liking. Rest, covered, before slicing thinly.
  3. Return pan to low heat. Add miso glaze and a splash of water and cook for 1 minute, until thickened. Remove pan from heat, return beef to pan, including any resting juices, and toss to coat in miso glaze.
  4. Cook soba Cook soba noodles in pot of boiling water for about 5 minutes, until tender. Drain well and return to pot with a drizzle of sesame oil to prevent sticking.
  5. Prep slaw Thinly slice bok choy and combine with toasted sesame seeds and all remaining slaw ingredients. Toss and season. Add a pinch of chilli flakes if you want some heat. Thinly slice beef against the grain.
  6. Serve noodles with beef and slaw.
