Cheesy Beef Meatballs with Chippies

Ingredients
Chippies
- 800g potatoes
- 1 tsp meatball spices
Cheesy Meatballs
- 1 carrot
- 1 cup grated cheese *
- 1 pack beef mince
- Remaining meatball spices
Tomato Aioli
- 1 pack smoky tomato chutney
- 2 Tbsp mayo ^
Salad
- 1 tsp mustard ^
- 1 carrot
- 1 Lebanese cucumber
- 1 courgette

Cook chippies Preheat oven to 230oC. Cut potatoes into chippies and on a lined oven tray with first measure of meatball spices, a drizzle oil and season. Cook for 25-30 minutes, until crispy. Turn once during cooking.

Make meatballs Grate first carrot. Mix all meatball ingredients with ½ tsp salt. Roll into golf ball sized balls. Dampen your hands with water, to prevent mixture sticking to your hands. Place meatballs on a lined oven tray.

Cook meatballs Cook meatballs on low rack in oven. Cook for 15-17 minutes, or until cooked through.

Make aioli In a bowl, combine smoky tomato chutney and mayo. Set aside.

Make salad In a bowl, combine mustard, a drizzle of vinegar and olive oil. Peel second carrot, cucumber and courgette into ribbons. Add to bowl, then season and toss.

Serve chippies with meatballs, salad and tomato aioli on the side.
