Salmon, Lemon & Herb Spaghetti

Ingredients
Salmon
- 1 pack salmon fillet
- 1 pack salmon herb mix
Spaghetti
- 1 courgette
- 2 vine tomatoes *
- 1 pack fresh spaghetti
- Zest and juice of ¼ lemon
- 1½ Tbsp sour cream
- ½ pack baby spinach *
- 1 bunch chives, finely chopped

Cook salmon Preheat oven to 220°C. Bring a medium pot of salted, hot tap water to the boil. Pat salmon dry and remove any bones. Rub salmon with salmon herb mix. Season, place on a lined oven tray and bake for about 6 minutes for medium, depending on thickness, or until cooked to your liking. Rest, covered.

Prep veggies Peel courgette into ribbons. Finely dice tomatoes.

Cook veggies Shake spaghetti to separate strands, cook in pot of boiling water, for about 3 minutes until tender. Drain and return to pot with a drizzle of olive oil to prevent sticking.

To finish Add courgette, tomatoes, lemon, sour cream and spinach to pot with cooked spaghetti and toss to combine. Season to taste. Flake salmon into bite sized pieces.

Serve spaghetti topped with salmon and chives.
