Pork Loin with Braai Salt and Corn Salad

Corn salad

  • 1 pack baby potatoes
  • 2 courgettes
  • 1 red onion
  • 1 Tbsp softened butter ^
  • 1 pack corn salad spice
  • 2 corn cobs
  • 1 bag baby spinach
  • ½ bunch mint, chopped *

Pork chops

  • 1 pack pork fillet
  • 1 pack braai salt

To serve

  • 1 pack smoked aioli


  1. Cook potatoes Preheat BBQ grill and hot plate to medium. Cut potatoes into 2cm rounds, add to a pot and cover with hot tap water. Cook on high heat for about 15 minutes, until just tender. Drain well.
  2. Prep salad Slice courgettes 1cm on an angle and cut onion into wedges. Combine butter and corn salad spice in a bowl.
  3. Cook pork Pat pork dry and toss with braai salt and a drizzle of oil. Cook on BBQ grill, for 10-14 minutes each side for medium, depending on thickness, or until cooked to your liking. Rest covered.
  4. Cook veggies Cut corn cobs in half and cook on BBQ grill, with pork, for about 10 minutes, until tender. Set aside to cool. Cook potatoes, courgette and onion on BBQ hot plate for 10-14 minutes, turning, until tender and slightly charred.
  5. Finish salad Use a knife to slice corn kernels off the cob. Add to a large bowl with butter, cooked veggies and remaining corn salad ingredients. Toss to combine and season.
  6. Serve pork chops and corn salad topped with a dollop of smoked aioli.
