
Turkey Nachos with Spiced Corn

Ingredients
Turkey Nachos
- 1 carrot
- 1 courgette
- 1 pack turkey mince
- 2 Tbsp Mexican spice mix
- 1 can chopped tomatoes
- 1 cup grated cheese
Spiced Corn
- 250g frozen corn
- Remaining Mexican spice mix
To Serve
- ¼ cup sour cream
- 1 pack green chilli sauce (adults)
- 1 pack cheese corn chips

Prep veggies Preheat oven to high grill. Grate carrot and courgette. Set aside separately. Heat a drizzle of oil in an oven-proof fry-pan on medium-high heat. mild

Cook turkey mince Add turkey, carrot and ½ tsp salt to pan. Cook for 3 minutes, stirring. Add first measure of Mexican spice mix and cook for 1 minute further, stirring, until fragrant. Add canned tomatoes and courgette. Bring to a simmer, reduce heat to low-medium and cook for 6-7 minutes, until slightly thickened and reduced.

Cook corn Toss corn and second measure of Mexican spice mix on a lined oven tray with a drizzle of oil. Season and grill for about 10 minutes, until golden. Toss halfway through cooking. Move tray to the bottom of oven to keep warm.

Grill cheese Sprinkle cheese over cooked turkey mixture, then place under the grill, above corn. Grill for about 3 minutes, until golden. Combine half the sour cream with green chilli sauce. Leave remaining sour cream plain, for little foodies as it’s a bit spicy.
