Italian Beef Sirloin Steaks with Salsa D'acciughe and Parmesan

Ingredients

VEGGIES

  • 1 broccoli, cut into small florets and stalk diced 2cm
  • 2 courgettes, diced 1cm
  • 1 punnet cherry tomatoes, halved
  • 1 block Parmesan cheese, grated
  • 1 pack salsa d’acciughe
  • ½ bag baby spinach

BEEF

  • 1 pack beef sirloin steaks

TO SERVE

  • 1 pack pine nuts
  • ½ bunch basil, chopped

Steps

  1. Preheat BBQ grill or hot plate to medium-high (if using). Bring a pot of hot salted water to the boil.
  2. Prep & cook veggies. Cook broccoli in pot of boiling water for 2-3 minutes, until tender. Drain.
  3. Toast pine nuts. Heat a dry fry-pan on mediumhigh heat. Toast pine nuts in pan for 1-2 minutes, until golden. Set aside.
  4. Prep beef. Heat 1 tsp oil in same pan on mediumhigh heat. Pat beef dry, remove all visible fat (discard) and season.
  5. Cook beef. Cook beef for about 4 minutes each side for medium (depending on thickness), or until cooked to your liking. Rest, covered. Alternatively, cook on BBQ
  6. Finish veggies. Add 1 tsp oil to reserved pan. Cook courgettes for about 2 minutes. Add broccoli to pan along with tomatoes and toss well to combine.
  7. Add Parmesan and salsa d’acciughe to pan. Toss through spinach and season.
  8. Finish dish. Chop basil and slice beef thinly, reserving any resting juices.
  9. Serve veggies topped with beef and resting juices. Sprinkle over basil and pine nuts.
