Cajun Fish Tacos

Ingredients
Cajun Fish
- 1 pack market fish
- 1 pack Cajun spice mix
- 2½ Tbsp flour
Salad
- 250g frozen corn
- 1 tomato
- ¼ cabbage
- 1 carrot
- 2 Tbsp mayo
To Serve
- 8 tortillas
- 1/4 cup sour cream
- Sweet chilli sauce

Prep fish Preheat BBQ hot plate to medium-high (if using). Preheat oven to 200oC (to heat tortillas). Bring a pot of salted water to the boil. Pat fish dry and remove any scales or bones. Cut larger fillets in half. Toss Cajun spice mix and flour together in a bowl, then evenly dust fish. Set aside.

Cook tortillas and corn Wrap tortillas in foil and warm in oven for about 10 minutes. Cook corn in pot of boiling water for 1 minute, then drain and refresh under cold water. Drain again well.

Make salad Dice tomato 1cm; thinly slice cabbage until you have about 2 cups worth; grate carrot. Add all to a bowl along with corn, mayo and a drizzle of oil and vinegar. Mix and season.

Cook fish Heat a drizzle of oil in a fry-pan on medium-high heat. Cook fish for 1-2 minutes each side, until just cooked through. Alternatively, cook fish on BBQ.

Serve tortillas filled with salad, fish, sour cream and sweet chilli sauce.
