Ingredients
Pulled Pork Taco
- 1 pack chipotle pork scotch
- ¼ cup chicken stock
- 1 pack soft tortillas
Salad
- ½ lettuce
- 1 carrot
- ½ Tbsp mayonnaise
Cucumber Salsa
- ½ Lebanese cucumber
- ¼ red onion
Chipotle Sour Cream
- 2 tsp chipotle sauce
- 2 Tbsp sour cream
Have Handy
- Oil
- Salt & Pepper
- Vinegar

Cook pork Preheat oven to 220°C. Place pork, any pork juices and stock in a baking dish. Cover with foil and bake for about 30 minutes, until heated through and easy to pull apart.

Heat tortillas Wrap tortillas in foil and bake for about 10 minutes or until ready to use.

Make salad and salsa Shred lettuce and grate carrots. Toss in a bowl with mayonnaise and season to taste. Finely dice cucumber and onion and toss in a second bowl with a drizzle of olive oil and vinegar. Season to taste.

Make chipotle sour cream Roughly pull pork apart with tongs or two forks. Toss through juices and season to taste
