Creamy Basil Pesto Chicken with Mash

  • 1 creamy basil pesto chicken


  • 800g potatoes
  • ½ cup milk


  1. Cook pesto chicken Pre-heat oven to 180°C and bring a pot of salted water to the boil. Remove plastic cover from pesto chicken and cover with foil. Place on an oven tray and cook for about 30 minutes, or until heated through. Stir halfway to ensure even cooking. Alternatively, spoon meal into a baking or casserole dish and cook at 200ºC for about 25 minutes, until heated through
  2. Cook potato mash Peel and dice potatoes 2cm. Cook in pot of boiling water for 15-20 minutes, until tender. Drain well and return to pot with a knob of butter and milk. Mash until smooth and season to taste
  3. Serve mash topped with creamy basil pesto chicken.
