Mexican Chorizo Burgers with Grilled Baby Capsicums

Ingredients

Burgers

  • 2 tomatoes
  • 1 avocado
  • 1 cos lettuce
  • 6 burger buns
  • 1 pack chorizo patties
  • 1 pack herb aioli

Grilled capsicums

  • 1 punnet baby capsicums
  • 1 red onion
  • 100g feta cheese
  • ½ bunch coriander

Have Handy

  • Oil
  • Salt & Pepper
  • Butter
  • Vinegar

Steps

  1. Prep burgers Preheat BBQ grill and hot plate to medium-high. Thinly slice tomatoes and avocado; roughly chop lettuce; cut burger buns in half and drizzle with olive oil.
  2. Prep capsicums Cut capsicums in half or quarters lengthways and thinly slice onion. Drizzle with oil and season.
  3. Cook burgers Drizzle patties with oil on both sides. Cook on BBQ grill for about 4 minutes each side, or until just cooked through. Chorizo will stay pink in colour. Rest, covered. Cook buns on BBQ grill for 2-3 minutes each side until lightly toasted.
  4. Cook capsicums Cook capsicums and onion on BBQ hot plate for about 5 minutes, until tender. Place on a plate and top with a drizzle of vinegar, feta and chopped coriander
  5. Serve everything in the middle of the table and let everyone build their own burger. Serve grilled capsicum and any remaining salad on the side.
