Middle Eastern Beef Steak with Bulgur Salad

  • 1 pack bulgur wheat
  • 1 tsp vinegar
  • ¼ tsp mustard
  • ½ capsicum, diced 1cm
  • ½ tomato, diced 1cm
  • 1 baby beetroot, grated
  • 1/8 red onion, thinly sliced
  • ½ pack baby spinach


  • 1 pack lean beef rump steak
  • 1 pack beef spices

To Serve

  • 1 Tbsp feta cheese, crumbled
  • 1 Tbsp hummus


  1. Preheat BBQ grill or hot plate to medium (if using). Bring a half full kettle of water to the boil.
  2. Prep & cook salad. In a heat-proof bowl, add bulgur and a pinch of salt and cover with boiling water. Cover and leave to soak for 15-18 minutes, until grains are tender. Drain well.
  3. Whisk together vinegar and mustard in a bowl and add all remaining salad ingredients.
  4. Prep & cook beef. Heat ¼ tsp oil in a fry-pan on medium heat. Rub beef with beef spices and season. Cook for 4 minutes each side (depending on thickness), or until cooked to your liking. Alternatively, cook on BBQ. Rest, covered.
  5. Finish salad. Add bulgur wheat to bowl with salad and toss well to combine. Season.
  6. Slice beef thinly.
  7. Serve salad topped with beef, feta and hummus.
