Bacon and Pesto Pasta with Caesar Salad

Ingredients

Pasta

  • ¾ pack spiral pasta
  • 1 broccoli
  • 1 courgette
  • 1 punnet cherry tomatoes
  • 1 pack bacon
  • 1 pack basil pesto

Caesar Salad

  • 1 baby cos lettuce
  • ½ block Parmesan cheese
  • 1 pack Caesar dressing

Have Handy

  • Oil
  • Salt & Pepper

Steps

  1. Cook pasta Bring a pot of hot salted tap water to the boil with a lid. Once boiling, add pasta and cook for about 10 minutes, or until just tender. Reserve ¼ cup pasta water, then drain well. Return pasta to pot with a drizzle of oil to prevent sticking.
  2. Prep veggies and bacon Cut broccoli into bite-size pieces; grate courgette; cut cherry tomatoes in half; slice bacon 1cm.
  3. Cook bacon Heat a drizzle of oil in a fry-pan on high heat. Cook bacon for 4-5 minutes, until golden. Add broccoli and cook for about 2 minutes. Add cherry tomatoes and cook for 1-2 minutes further, until broccoli is tender and tomatoes are warmed through.
  4. Finish pasta Remove pan from heat and add drained pasta, courgette and basil pesto. Keep separate for fussier little foodies. Toss well and season to taste. If you prefer a saucier pasta, add 1-2 Tbsp of reserved pasta water.
  5. Make salad Roughly tear lettuce and shave Parmesan cheese. Toss in a bowl with Caesar dressing.
  6. Serve pasta with Caesar salad.
