Greek Lamb Pizzas with Whipped Feta

Ingredients
Pizzas
- 70g tomato paste
- 2 Tbsp sweet chilli sauce
- ½ red onion
- 3 pizza bases
- 1¼ cups grated cheese
- 1 pack Greek lamb mince
Greek Salad
- 1 tomato
- 1 capsicum
- 1 Lebanese cucumber
Whipped Feta
- 50g feta cheese
- 150g yoghurt
Have Handy
- Oil
- Salt & Pepper
- Vinegar

Prep pizza toppings Preheat oven to 220°C. Preheat two oven trays. In a bowl, combine tomato paste, sweet chilli sauce and a drizzle of oil. Thinly slice red onion.

Top pizzas Cut one pizza base in half. Divide tomato mixture between bases and spread to cover. Sprinkle half the cheese over bases, then top with onion. Using clean hands, tear away small amounts of lamb mince and dot on top. Top with remaining cheese.

Cook pizzas Transfer 1½ pizzas to each tray and cook for 12-14 minutes, until the base is crisp and golden and mince is cooked through. Swap trays halfway to ensure even cooking. Once cooked, cut pizza into triangles.

Prep salad Dice tomato, capsicum and cucumber 2cm. Toss all in a bowl with a drizzle of vinegar and oil. Season to taste.

Make whipped feta In a bowl, whisk feta and yoghurt together until smooth and season to taste.

Serve pizza and salad drizzled with whipped feta.
