Fresh Start Restart: 4 Ways To Toast

Toast is one of those amazing vehicles that you can top with almost anything and it will be 1. delicious, and 2. really hit the spot! Here we’ve given you 4 yummy options to load that little slice of heaven up for breaky, lunch or even dinner!

FS Toast Toppings

Caprese

2 slices of preferred bread 
1 tbsp of olive oil 
1 large mozzarella ball
1 large tomato 
A few fresh basil leaves 
Salt and pepper 

Method 

  1. Toast the bread. While the bread is toasting, slice the mozzarella and tomato. Pick basil leaves.  
  1. Drizzle olive oil on the toasted bread, layer on mozzarella, basil leaves and tomato. Season with salt and pepper.

Egg Smash

2 slices of preferred bread 
2 eggs 
1 Tbsp yoghurt 
1 small spring onion 
Salt and pepper 
pinch of micro cress or parsley (optional) 

Method

  1. Place eggs in a small pot and cover with cold water. Bring to the boil, reduce to a simmer and cook 5–6 minutes (hard-boiled). Drain and cool eggs under cold tap, peel shells off eggs under cold running water.  
  1. Finely chop the spring onion. Place eggs in a medium bowl and mash with a fork. Add yoghurt and finely chopped spring onion, season with salt and pepper and stir to combine well. Toast the bread.  
  1. Top the toast with egg mixture and sprinkle micro-herbs (if using).

Avocado & Kimchi

2 slices of preferred bread 
1/2 avocado 
Sprinkle of Salt 
1 Tbsp kimchi 

Method 

  1. Toast the bread. Cut avocado into slices. 
  1. Place half the sliced avocado on each piece of toast and use a fork to mash gently. Top with kimchi.

Rocket, Cottage Cheese & Balsamic Mushrooms

2 slices of preferred bread 
1 Tbsp of oil 
3 small mushrooms 
1 Tbsp balsamic vinegar, plus some for drizzling (optional) 
30g rocket leaves 
2 Tbsp cottage cheese 
Salt and pepper 

Method 

  1. Toast the bread. Meanwhile, slice the mushrooms. Heat oil in a small fry-pan to medium-high heat, add mushrooms and cook for 1-2 minutes to soften. Add the balsamic vinegar and toss to coat, remove from heat and set aside. 
  1. Place a few rocket leaves on each piece of bread. Spread over the cottage cheese, season with salt and pepper and top with balsamic mushrooms and drizzle more balsamic over (optional).
