
These bowls are trending at the moment for a reason! They contain a great range of ingredients – quality protein sources, colourful vegetables and healthy fats, all keeping you satiated for the rest of the day. With more than 40g of protein per serve, this is the perfect lunch recipe to keep you going. The mince in this recipe could be swapped for crumbled tofu to make this recipe vegetarian. To save time you can buy pre-made hot honey, and taco seasoning, but it’s just as easy to make it yourself too!
High Protein Kūmara and Beef Bowls
Ingredients
- 2 large orange kūmara (around 600g), tossed in oil, salt and pepper
- 2 tbsp homemade taco seasoning 1 tsp garlic powder, 1 tsp oregano, 2 tsp ground cumin, 2 tsp smoked paprika, 1/2 tsp chilli powder.
- 4 tbsp honey
- 1 tsp chilli flakes
- 500 g lean beef mince
- 8 tbsp lite cottage cheese
- 2 avocado, thinly sliced thinly sliced
- 100 g rocket
- 50 g pink pickled onion (thinly sliced red onion, left overnight, submerged in a 1:1 white vinegar and water solution)
Instructions
- Preheat oven to 200°C (or 180°C fan bake). Dice kumara 2cm. Toss with oil on 1-2 lined oven trays and spread in a single layer. Season with salt and pepper and roast for 30-35 minutes, until tender and golden. Turn once during cooking.
- While kūmara roasts, prepare your other ingredients. Mix all your spices to make your homemade taco seasoning. Add honey into a small microwave safe bowl, along with chilli flakes. Heat this in 10-15 second increments until runny.
- Heat oil in a frypan on low-medium heat. Add mince and cook until starting to brown. Add in 2 tbsp of your taco seasoning and cook until the edges of the mince start to crisp slightly (approx. 10-12 mins).
- Once everything is finished cooking, you can assemble your bowl. Place kūmara, mince, cottage cheese, rocket and sliced avocado in your bowl, drizzle with hot honey and top with pickled onions, salt and pepper! Enjoy.
